View Full Version : Guinness Corned Beef - Sam Wilson

Hey Sam still looking for the Guinness Stew but check this out:

Roast this Corned Beef slowly at a low setting for a melt in your mouth delight. The aroma is fantastic!" Original recipe yield: 16 servings.

INGREDIENTS:
4 pounds corned beef brisket
1 cup brown sugar
1 (12 fluid ounce) can or bottle Irish stout beer (e.g. Guinness)

DIRECTIONS:
Preheat oven to 300 degrees F (150 degrees C). Rinse the beef completely and pat dry.
Place the brisket on rack in a roasting pan or Dutch oven. Rub the brown sugar on the corned beef to coat entire beef, including the bottom. Pour the bottle of stout beer around, and gently over the beef to wet the sugar.
Cover, and place in preheated oven. Bake for 2 1/2 hours. Allow to rest 5 minutes before slicing.

Tips:
During the last hour, you may put vegetables in the roasting pan as well. Try a wedge of cabbage, new potatoes, onion, carrots, etc. You may need to add a little more beer with your vegetables.

Sorry its a term for Cornbeef. The best cornbeef you can get.

Beef & Guinness Stew Recipe
Ingredients
2 pounds lean stewing beef
3 tablespoons oil
2 tablespoons flour
Salt and freshly ground pepper and a pinch of cayenne
2 large onions, coarsely chopped
1 large clove garlic, crushed (optional)
2 tablespoons tomato puree, dissolved in 4 tablespoons water
1-1/4 cups Guinness stout beer
2 cups carrots, cut into chunks
Sprig of thyme


Instructions
Trim the meat of any fat or gristle, cut into cubes of 2 inches (5cm) and toss them in a bowl with 1 tablespoon oil. Season the flour with salt, freshly ground pepper and a pinch or two of cayenne. Toss the meat in the mixture.

Heat the remaining oil in a wide frying pan over a high heat. Brown the meat on all sides. Add the onions, crushed garlic and tomato puree to the pan, cover and cook gently for about 5 minutes.

Transfer the contents of the pan to a casserole, and pour some of the Guinness into the frying pan. Bring to a boil and stir to dissolve the caramelized meat juices on the pan.

Pour onto the meat with the remaining Guinness; add the carrots and the thyme. Stir, taste, and add a little more salt if necessary.

Cover with the lid of the casserole and simmer very gently until the meat is tender -- 2 to 3 hours. The stew may be cooked on top of the stove or in a low oven at 300 degrees F. Taste and correct the seasoning. Scatter with lots of chopped parsley.

Yield: 6 to 8 servings

Maybe I should wait till my buddy is down from Boston for this.

I'm gonna cook it on Sunday, and I'll ask my wife if she'll make a peach pie w/crumble top. WOrd.

Hey Bulls, I was shopping today and saw a nice 3 1/2 pound Cornbeef and thought "Hmmm wonder if that posting is still up" I remembered everything needed and figured I'd make that for dinner tonight.
Just threw it in the oven and in 90 mins I'll throw in the vegies.
I'll let you know how it comes out. Also gonna do the stew this week as well. :buttrock:

Ok Bullseye, how do we go about having you send us some Irish beers?? Sure we can get the Guinness and Murphys but I bet there are a number of tasties we don't see. Do they have Guinness Gold in Ireland? Test marketed here long time back, I thought it was tops but it didn't fly. Sure its too expensive to ship but we can dream....

So how was it.
Yo it came out real good. Only bad thing is when the wife sat down and took the first bite she remembered that she doesn't like Corn beef. So I made her a pizza and ate the rest. Man I got some gas today.
