No matter what you do, there is always someone somewhere who will take exception...
Using sports mascots as examples, who would name their team to create an insult to ANY ethnic or religious group???
Owners, schools want their teams named for something they will be proud of and that will hopefully inspire the players and fans alike by the attributes of the chosen mascot.
Although referring to a group of native americans as "redskins" would be considered a racial slur, having a team named the "Redskins" (while it wouldn't happen in today's climate) was certainly seen to convey strength, power, pride et cetera.
IMHO, the people who raise a clamor over such things are only trying to get attention (and perhaps money) for whatever reason the find themselves needing the spotlight.
