As I was saying, I'd be all over a classic Kirby but the sword Kirby was a puzzling choice that didn't personally interest me. I'm curious why they would appeal to the Kirby fanship (small community, it was my first game that I've beaten) and then appeal to an even smaller slice of that community.

Ocarina of Time is possibly the quintessential Zelda, but the Link statues from it contain very little detail, and are too small. I want more.

In their defense, I wouldn't mind picking up the Worms one eventually. I just have bigger fish to catch at the moment.

I'm in the same boat with the "Link on Loftwing" piece. I actually really like it and I think it would compliment my existing display quite well but I'm in no rush to pick it up. I don't think the market is there for that piece to get sold out and skyrocket in value so I'm comfortable waiting for a while to get it. Now with a classic Mario, Luigi, Peach, Kirby, Wario, Ash Ketchum, etc. I would throw down an order on day 1 because I think that would appeal to such a drastically wider audience.

I think there's several parts to this.
1. Although F4F is a business dealing with the demands of licensing I'm sure there's passion involved. Any artistic people will have passions for particular projects, it's why they're artists. If the team is currently passionate about a certain vision for a particular look that isn't the character's most familiar costume, I suppose that's what they'll push for.
2. For 1/4 statues, F4F is really just getting into them. Zelda Twilight Princess was first, and now after all these finally Metroid. Ganondorf and Zelda have 1/4 statues, so it's a safe bet Link is coming. It took a long time to get up to the current 4 for Zelda. Sideshow would've had more by now, but F4F operates differently, thankful for that.
3. Just to reiterate, F4F is s l o w when it comes to output, slower than a lot of other companies. But the product is al out always good (there have been some issues), so there's a balance.
4. I think there is room to do the definitive version of the character 1st and future sales won't be hurt. SS is proof of this, they've done several PFs for the same characters in different costumes. For video game characters there's an advantage over comic characters, and that's the fact video game character costumes almost always change per console, if not per game. The "definitive" Link can be Twighlight Princess or Ocarina for some. Why not both have 1/4 statues? I Like my TP 1/4 Ganondorf but I would've bought an Ocarina Ganondorf 1/4. Mario can be classic style or Super Smash Bros. Definitely room for all of ES isn't too huge on each piece.
