I remember you telling me you have to visualize where everything should go, from large freezers to the wine. Everything has to make sense where it goes for the flow of the restaurant.

Yep that too! As well as train the staff and do a bunch of mock scenarios.

But they tend to turn out to be fun sometimes!!
