The titles never really impress me per se, but if you think about it they all basically just tell you what each film is about.
This one is very simple and the more I think about it, the more I like it.

While the obvious meaning would seem to indicate Luke is the one being referenced keep in mind the word "Jedi" can be interpreted both plural and singularly. Another possibility is it's referring to the Jedi as a whole instead. Whether that would include Rey, assuming she becomes a Jedi and/or Finn as well makes this title all the more ambiguous.

Good point. We could potentially see another death in Luke which would make Rey the last one.
His death could parallel the one by Kenobi in A New Hope --as a way to inspire and lead.
