asian chicken salad

sauce
2 tablespoon reduced sodium soy
2 3/4 teaspoons rice wine vinegar
1 1/4 teaspoons brown sugar
1/2 teaspoon sesame oil
1/2 teaspoon chili-garlic sauce
2 3/4 teaspoons canola oil
1 teaspoon fresh minced ginger
1 cloves garlic minced
1 teaspoon tahini paste
4 tablespoons teaspoons reduced sodium chicken broth

salad
1 3/4 teaspoons sesame seeds
2 1/2 cups lettuce
1/3 cup grated carrots
2 tablespoons scallions chopped
1 piece shredded chicken

1. To prepare the dressing: Combine soy sauce, vinegar, brown sugar, sesame oil, and chile-garlic sauce in a glass measuring cup; stir to blend. Heat canola oil in a small saucepan over medium-high heat. Add ginger and garlic; cook, stirring, until fragrant, 1 to 2 minutes. Add the soy sauce mixture to the pan; bring to a simmer. Whisk in tahini and broth (or poaching liquid); cook until reduced slightly, 3 to 4 minutes. Let cool.
2. To prepare the salad: Heat a small, dry skillet over medium-low heat. Add sesame seeds and cook, stirring, until lightly browned and fragrant, 1 to 2 minutes. Transfer to a small plate to cool.
3. Combine cabbage, carrots, radishes, scallions, and chicken in a large shallow bowl. Stir dressing to recombine and drizzle over the salad; toss to coat. Sprinkle the sesame seeds on top.

dressing will keep for 2-days in the fridge

Barbecued Chicken-and-Black Bean Burritos
Serves 2; 368 calories per serving
Ingredients

1 tablespoon olive oil
1 piece chicken breast, cut into bite-size pieces
1/4 cup chopped onion
2 garlic cloves, minced
3 tablespoons bottled carb solutions barbecue sauce
1/2 (15-ounce) can low-sodium black beans, drained
1/4 cup shredded reduced-fat medium cheddar cheese
2 (10-inch) tortillas wheat
1/8 cup low-fat sour cream
Instructions

1. Heat oil in a large nonstick skillet over medium heat. Add chicken, onion, and garlic; cook 8 minutes or until chicken is done, stirring constantly.

2. Stir in barbecue sauce and beans. Sprinkle with cheese; cook 5 minutes or until thoroughly heated.

3. Warm tortillas according to package directions. Spoon about 1/2 chicken mixture down center of each tortilla; top each with 1 tablespoon sour cream, and roll up.

Mixed Greens with Grapes and Feta
Serves 2; 135 calories per serving
Ingredients

For the dressing:
1/8 cup extra-virgin olive oil
2 tablespoons red-wine vinegar
salt to taste
Freshly ground pepper to taste

For the salad:
2 cups lettuce
1/2 cups halved seedless grapes
1/4 cup crumbled feta
Instructions

1. To prepare dressing: Whisk (or shake) oil, vinegar, salt and pepper in a small bowl (or jar) until blended.
2. To prepare salad:lettuce in bowl Drizzle the dressing on top and toss to coat. Scatter grapes and cheese over each salad; serve immediately.

To make ahead: The dressing will keep, covered, in the refrigerator for up to 2 days.

Roast Beef Philly Wrap
Serves ; 200 calories per serving
Ingredients

1/8 cup non-fat cream cheese, divided
2 La Tortilla Factory Low Carb Tortillas
1 sliced tomato
4oz sliced lean roast beef
lettuce
Instructions

1. For each wrap, spread an even amount of cream cheese over the surface of the tortilla. Layer the tomato, spinach, and roast beef on top. Fold opposite sides of the tortilla toward the center and roll up from the bottom.

Texas Chili
Serves 2; 300 calories per serving
Ingredients

1.5 pounds chuck beef stew meat, fat trimmed, cubed
1/2 tablespoon minced garlic
1/8 cup chili powder
1/2 teaspoon red pepper ?akes
1 tablespoons quick-cooking tapioca
1/2 tablespoon oregano
1/2 teaspoon cumin
1 cubes beef bouillon
1/2 teaspoon black pepper
7 ounce can fat-free beef broth
1/4 medium onion, finely chopped
Instructions

Add all ingredients to a slow cooker and mix well. Cover and cook on low 8 hours. Stir chili well before serving. Sprinkle low-fat cheddar cheese on top if desired.

i do use olive oil but for healthier you need to use a spray.

spray has 0 calories and olive oil has 120 per tbsp

Its my understanding that Olive oil is a better alternative because it is a better oil for your body to digest. The fat from Olive oil is a better fat and contains proteins that help break down fats in general. A zero calorie generic nonstick spray will not add calories to your food, but what else is it adding? That residue is still something and is then ingested into your body either way. Honestly, the amounts you are consuming of the spray probably doesn't effect you anymore then smelling a rose would.

If you are purely counting calories it is much better to consume the 120 calories that will in turn help your digestion of fat then consuming the other. Plus, counting calories is not necessarily the best choice for diet, but I don't know anyone's habits/life.

Thats just my opinion, so take it or leave it. Oh and cooking olive oil is a little more complicated as it requires less heat, so look it up if interested.

olive oil is great for you you got that right. the spray is all canola oil, the best oil for you, but with all the stuff removed from it. even better for you cause you know you are not adding anything to your food

as for countingf calories it depends. i dont have a weight issue. if i want to lose weight i will with a basic diet and exercise. i have done it before. my wife cant do that she need to really follow the 40% from carbs, and 30% from each of fat and protein rule to get the most from her diet. as long as you buy fresh veggies instead of canned or frozen an average person will be fine just doing calories cause there is no added sodium or anything else. as you said though everyone is different and there is no neutritionist that can tell you what is best for you. they can tell you what to try and then go from there.
