Here's a weird one but I'm blown away by the cast each time I see it & I realy like this one.
Paul Giamatti (oscar winner)
Keven Spacy (Oscar Winner)
Kathy Bates (Oscar Winner)
Rachel Weisz (Oscar Winner)
Edward Blake in a cool little spot
Vince Vaugn
Fred Clause is the movie.
4 Oscar Winners in one movie. I can't think of another one.

Next years Dark Knight Rises has a pretty impressive cast too.

GoodFellas is my Fave but True Romance has it
due to the sheer volume

Dennis Hopper
Christian Slater

Gary Oldman
Val Kilmer
and throw in a James Gandolfini
for some spice along with Chris Penn and Michael Rapaport as well as Tom Sizemore.

I defy anyone to name a more recent ensemble, more at the top of their respective games. Barely, if any "A-listers" among them, but all masters of their craft
