I only have room for one more X-Men statue. Debating if I should wait for Bishop or just order the Cable PF. Decisions, decisions.

This is true. Can't have 1 without the other. Better find more room in your statue display ha.
Side note. June is coming up fast here and seems like a good time to get an X-Men reveal. Fingers crossed! 
In reality though...it will just be another Batman statue reveal

I think in June we’ll get some info on Sideshow’s July event (the event substituting for SDCC) so at least we’ll know when to expect more news!

Who knows, but count on someday in June probably later part for the announcement, then July will count down to the weekend that would have been SDCC. So be prepared for all sorts of emotions.

Aside from the short lived rivalry with Cable because of Hope I don't think Bishop and Cable have too much to do with one another. And even Bishop's villain stint has been retconned, explained and swept under the rug at this point, thankfully.
I would get Cable because he exists now. We have no idea when SS would ever do a Bishop (here's hoping soon, I'd really love to have a Bishop). And when that day comes you can decide then if you even like that Bishop PF or maquette, if you have enough space for it, and if you want to sell something to have more space for him.
