This is the only info I can find on how powerful her claws are. I don't think they are powerful enough to cut through stone like that?

It's the comics, anyone can do anything.... If Superman can push planets out of orbits then Catwoman can cut stone with her claws..

I mean, I saw her knock out Barry and Wally recently so power scaling is malleable to the writers whim.

Comics or not its possible to carve into stone or cement with a sharp object and catwoman claws are incredibly sharp

And why not? If "anything goes", then there wouldn't be any limitations to what anyone does. Everyone would be a mage or a god.
