guacamole

2 haas avacados
1 lime
1 jalapeno
1 tbsp fresh cilantro
1 roma tomato seeded
1 tsp kosher salt
1 tsp pepper
1/4 white onion
1 tbsp garlic powder

in a food processor add all except lime and avacados. chop tell it is all well blended. put in bowl
if you dont have a processor then just chop the onion, cilantro, tomato, jalapeno. place in bowl and add the salt, pepper, garlic powder. mix.

half the avacados. empty one into the bowl and mash it all together leaving it slightly chunky. dice the other one and add to mix for chunky guacamole.

just mash both avacados in if you want smooth guac

roll lime on counter to release juice. cut in half and squizze on half on top of guac to keep from going brown.


cook note. for less hot guac seed the jalapeno and only add half to mix

kansas city rub means sugar based. memphis means spicy. carolina the birth place of bbq uses pork as there main item. texas main item is brisket and brisket mean awesome.


kansas city rib rub
•1/2 cup brown sugar
•1/4 cup paprika
•1 tablespoon black pepper
•1 tablespoon salt
•1 tablespoon chili powder
•1 tablespoon garlic powder
•1 tablespoon onion powder
•1 teaspoon cayenne

Combine all ingredients together and transfer to an air tight container


Memphis Style Rib Rub
•4 teaspoons paprika
•2 teaspoons salt
•2 teaspoons onion powder
•2 teaspoons fresh ground black pepper
•1 teaspoons cayenne

Mix ingredients together. Store in an airtight container.


Carolina BBQ Rub
•2 tablespoons salt
•2 tablespoons sugar
•2 tablespoons brown sugar
•2 tablespoons ground cumin
•2 tablespoons chili powder
•2 tablespoons freshly ground black pepper
•1 tablespoon cayenne pepper
•1/4 cup paprika
Mix ingredients together. Store in an airtight container.

texas brisket rub
•1/2 cup paprika
•1/3 cup brown sugar
•3 tablespoons garlic powder
•3 tablespoons onion powder
•2 tablespoons oregano
Mix ingredients together. Store in an airtight container.

you will also need to remove the ribso fthe japs.

you see white = white hot.

Emeril's Essence

Ingredients
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Directions
Combine all ingredients thoroughly.

i just found this kick ass pesto adaptation to throw into pasta

1 1/2 cup loosely packed cilantro
1/2 cup loosely packed parsely
3/4 cup walnuts
2 garlic cloves
6 TBSP olive oil

Take all except the olive oil and grind up in a food processor/chopper dealy

add olive oil till it becomes like a paste

mix with pasta and whatever veggies you like

this was awesome mixed with whole grain pasta and some cauliflower and red peppers. However, it did need a little acid so I squeezed some lime juice in there and added some tomatoes on the second night. SO GOOD!!

this is from raven1014

1 can of chili
1 package of cream cheese
1 pack of shredded cheddar

Heat in microwave for about 2 mins, mix and heat for about another minute. It's awesome with tortilla chips.

I'm of the opinion that the only things a good steak needs are butter, salt, and pepper. But if you've got a tougher, "lesser" cut, try this out:

Shiner Bock steak marinade

Ingredients
• 1 (12 ounce) Shiner Bock beer
• 2 tablespoons garlic, chopped
• 2 tablespoons red onions, diced fine
• 2 tablespoons Worcestershire sauce
• 4 dashes Tabasco sauce
• 2 limes, juice of
• 1/4 cup brown sugar, packed
• 1 tablespoon coarse brown mustard
• 2 tablespoons olive oil
• 2 teaspoons salt

Directions
Combine all ingredients except salt.
Pour over steaks and marinate from 4 hours to overnight. Discard marinade.
Cook the steaks to your preference, season with salt to taste after cooking.
