In terms of "normal" releases (pieces which have actually appeared in the films), I think there are 13:

EPI Maul Damaged
EPI Maul Complete (CS Exclusive)
EPII Mace
EPII ObiWan
EPII Dooku
EPIII Yoda
EPIII Anakin
EPIII ObiWan
EPIII Sidious
EPIII Dooku
EPIV Vader
EPIV ObiWan (Weathered Exclusive)
EPVI Luke

Most of these have a gold chase version (not the exclusives), some have black chrome variants (EPIII Yoda and Sidious for sure), and I think there was a silver chrome EPVI Luke (from ebay). There is also an EPIV "as first built" ObiWan saber. An EPIII Vader is coming out as well. So, I think there are roughly 30 in total. I keep from going crazy by only collecting the pieces which were actually in the films, so I can avoid all the gold/chrome pieces.

EpIII Vader is out.
EPIII Dark Chrome Anakin from SWShop, Sidious from BestBuy, and Yoda 2005 Convention exclusive.
Ebay did have a bright chrome ROTJ Luke.
European Exclusive Yoda and Sidious bright chrome variants .
New ones coming: EPII Anakin, EPIV Luke
There is a gold for each of these except CS Maul. The exclusives included gold lightsabers mixed in with the runs. I have the Best Buy Sidious exclusive in gold and have seen the C3 EpIII Obi-wan in gold.
I think all the golds are the same, I don't think they change them for the exclusive runs, just add them in from the regular series. I think the only difference in the gold from the regular release and the exclusive release is that they have different bases(i.e. the base that comes with the exclusive). So I think all the gold's are the same.

The Ep. II saber has the powdercoat gray application behind the handle and the stand is marked as Count Dooku's, the Ep.III saber is all chromed in that area and the stand is marked as Darth Tyranus.
