And issue 0 came out 7 years ago. Bought issue #1 but haven't read it yet, but I remember loving issue #0.

Not sure there's enough content for a Monster of Frankenstein Omnibus. That said, there is a full color trade paperback collecting everything that's in the Essential Monster of Frankenstein which CGN has as being released September 29th.

They were doing the Hulk: Visionaries and only reached volume 8... I am holding out hope that they decide to give his run the Omnibus treatment

Actually it's just getting restarted. Tim Sale's signature on the cover image is dated '08 (!). So it's been a long time since the first issue (#0). Just read #1, which reprints #0, and it's excellent. Going to be a great addition to their Marvel Color series books!
