street fighter is still the canon, but i think guilty gear series has made some serious improvements in fighting game dynamics.

You might be thinking of Primal Rage or whatever it was called. I don't remember an ape in the Killer Instinct games. I was a big Chief Thunder fan. Glacier and Cinder were cool too. Man, that was a cool game.

Not a all time fav fighting game, but when your drunk Super Smash brothers is fun.
A cousin of mine had it, and after a family gathering we went back to his house to chill. Was a blast.

If your a street fighter III fan you`ve got to check this video out it`s from evolution 2004 (a fighting game tournament in the US) and features Daigo Umehara (ryu) vs Justin Wong (chun-li). It starts off pretty much like a normal match with each player winning one a piece but what happens in the final 30 secs of the final round is awesome.
To set the scene basically wong (chun-li) still has just under half his energy bar left while daigo has a about one pixel! of his energy bar left. Which basically means one hit (whether he blocks it or not) means game over, chun-li launches into a superarts move and......well just see what happens, but lets just say you need to appreciate sf III`s parry system
