I don't see this as a play on Star Wars. Bounty hunters existed before Star Wars. Jedi Knights were based on knights and magic wielders. If anything, you could say this line and Star Wars were similarly inspired.
Like you said though, it's fantasy. Who can say (without any source material to reference) if this character would be a viable bounty hunter based on their size alone.

For me they have to sculpt something that is sexy but not over the top, like I don't want to see her wearing a helmet, combat boots and then a string bikini... just makes no sense...

It's not that simple. Even with matching size and martial prowess, men and women aren't that interchangeable. There are various psycho and physiological X factors. My idea of plausibility is a bit more grounded in reality than what's popular today.
I'm more interested in a statue of a woman who isn't a warrior, bounty hunter, or a dark sorceress.
