For me it just doesnt get better than Supes vs the Phantom Zone criminals in Part 2.

Still holds up to this day imo.

And although not technically a 'superhero' fight, I also love the Neo/Smith fight at the end of the third Matrix movie. Definitely an indication of what should be seen in a Superman movie!
