I agree that Doomsday is a ridiculous one-note character (in fact, I think he's more of a plot device than a character) but I think he'd take out the Hulk before the Hulk's anger could amp up his strength.

This is not a never ending fight where Doomsday gets to die and come back stronger until he can beat his opponent. Once you lose the fight you've lost.
