I don't mind the stubble and I think I know what they were going for. If you look at the princess it looks like she is trying replicate the light source through the paint job, the face, top of the breasts, tops of the leg etc are much lighter than the rest or her skin just like the painting which is to show light and shadow. As you noted the face of the man is in a lot of shadow and too much so to duplicate with just painting that dark (It would look bad) so they went with stubble.
I agree though you can see under his nose in the painting and there doesn't appear to be any mustache or stubble so it is a bit of interpretation but I still love it.
