This Spider version and the "Chicken leg" version all stem from the Clone Wars animated series. Which is based on the premise that Darth Maul survived being cut in half (somehow) and, though insane, managed to fashion himself a lower body made from scrap droids and metal into the spider form you see before you. He was eventually found and returned to Bathmor (spelling?) where the Dark sisterhood made him new legs (also fashioned from destroyed droids) and you have the chicken leg version.

One story, "Old Wounds", considered to be non-canonical to Star Wars lore, depicts Darth Maul surviving his bisection at the hands of Obi-Wan Kenobi, replacing his missing bottom half with cybernetic replacements. Its called Star Wars visionaries back in 2005 by Dark Horse Comics wrote it in the expanded universe , just to add to it.
